When a gingerbread baker bakes...

A Danish song from the play "Folk og Røvere i Kardemommeby"
250 gr soft butter
1/2 tbsp. st. carnation
1 tbsp. st. cinnamon
1/2 tbsp. st. ginger
1/2 tbsp. st. cardamom
175 gr sugar
1 dl dark syrup
3/4 dl water
600 gr wheat flour
1/2 tbsp. baking soda .
Stir butter and spices together in a bowl. Boil sugar, syrup and water.
Pour the hot mixture over the butter and let it cool.
Mix flour and baking soda and stir it into the dough. The dough is very soft now
and must rest for at least 1 day in a refrigerator covered with film.
Preheat the oven to 200 degrees.
Take a little dough at a time and roll it on a floured table approx. 1/2 cm thick.
Make cakes in the desired shape and place them on a plate with parchment paper.
Bake the cakes in the middle of the oven for 8-10 min. depending on their thickness.
